Asafoetida (Hing) is a dried latex (gum resin) obtained from the taproot of certain species of Ferula. It has a strong pungent smell in raw form, but when cooked, it imparts a unique onion-garlic-like flavor to dishes. Widely used in Indian cooking, especially in dals, curries, and pickles, it also has medicinal benefits such as aiding digestion, relieving bloating, and acting as an antimicrobial.
